Chicken Schnitzel Curry
A German twist on traditional chicken schnitzel, topped with an Indian-inspired curry sauce.
Ingredients
- β4 chicken breastsboneless, skinless
- β1 cup flourall-purpose
- β2 tbsp indian curry powder
- β1 cup curry saucestore-bought or homemade
- β1/4 cup vegetable oil
- β2 tbsp butter
- β1 tsp gingergrated
- β1 tsp garlicminced
- β1/4 tsp cayenne pepperoptional
- β1 cup juicy tomatoescanned, diced

1. Prepare the breading station by mixing flour, curry powder, and a pinch of salt in a shallow dish.

2. Season the chicken breasts with salt and pepper.

3. Dip each chicken breast in the flour mixture, coating both sides evenly.

4. Heat 1/4 cup of vegetable oil in a large skillet over medium-high heat.

5. Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.

6. Remove the chicken from the skillet and set aside.

7. In the same skillet, add the butter and sautΓ© until melted.

8. Add the grated ginger and minced garlic and cook for 1 minute, until fragrant.

9. Stir in the curry sauce and diced tomatoes.

10. Bring the sauce to a simmer and cook for 2-3 minutes, until heated through.

11. Return the chicken breasts to the skillet and coat with the curry sauce.
