Peruvian Grilled Anticuchos
A traditional Peruvian dish of grilled beef heart skewers, marinated in a flavorful mixture of onions and spices.
Ingredients
- β1 pound beef heart
- β2 large onionsthinly sliced
- β3 cloves garlicminced
- β2 aji amarillo pepperdiced (or substitute with jalapeΓ±o)
- β1 teaspoon peruvian aji panca pepper powder
- β1 teaspoon cumin
- β1/2 teaspoon chili powder
- β1/4 teaspoon black pepper
- β1/2 teaspoon salt
- β grilled

Soak 20-25 bamboo skewers in water for at least 30 minutes.

Cut the beef heart into 1-inch cubes and thread onto the skewers.

In a bowl, mix together sliced onions, minced garlic, diced aji amarillo pepper, Peruvian aji panca pepper powder, cumin, chili powder, black pepper, and salt.

Add the onion mixture to the skewers and toss to coat.

Let the skewers sit at room temperature for 30 minutes to allow the marinade to penetrate.

Preheat a grill to medium-high heat.

Grill the skewers for 2-3 minutes per side, or until the beef is cooked to your desired level of doneness.
