Mexican Tagine Flavors Potato Tacos
A fusion of Mexican flavors and traditional Moroccan tagine, these potato tacos are a unique and delicious twist on a classic dish.

- β2 tablespoons TagineMoroccan spice blend
- β1/4 cup Flavorful Olive Oil
- β1 medium Onionabout 1 cup diced
- β1/4 cup Cilantrofresh, chopped
- β2 tablespoons Lime Juice

Preheat the oven to 400Β°F (200Β°C).

Peel the potatoes and cut them into 1/2-inch cubes. Place them in a bowl and drizzle with 2 tablespoons of olive oil, tossing to coat.

Sprinkle the tagine over the potatoes and toss to combine.

Season with salt to taste. Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and lightly browned.

While the potatoes are roasting, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the diced onion to the skillet and cook, stirring occasionally, until softened and lightly browned, about 10-12 minutes.
