Argentinian Beef Stew
A hearty stew originating from Argentina, made with flavorful beef and served with crusty bread.
Ingredients
- β1 pound beef stew meatcut into 1 1/2-inch cubes
- β1 large onionchopped
- β3 cloves garlicminced
- β1 cup flavorful red winesuch as Malbec
- β2 cups beef brothhomemade or store-bought
- β2 tablespoons tomato pastecrushed
- β1/4 cup chopped fresh parsleychopped

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes. Remove from pot and set aside.

Reduce heat to medium and add onion. Cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add wine and cook, stirring to scrape up browned bits, until reduced by half, about 5 minutes.

Add broth, tomato paste, and browned beef. Bring to a boil, then cover and transfer to oven.

Bake at 300Β°F for 2 1/2 hours, or until beef is tender.

Season with salt and pepper to taste.
