Peruvian Causa Rellena
A traditional Peruvian dish made with boiled potatoes, filled with a delicious chicken and avocado mixture.
Ingredients
- β4 large Peruvian potatoes
- β1 pound Flaky chicken breastcooked and diced
- β1 medium Roasted red oniondiced
- β2 ripe Avocadodiced
- β2 large Limena potatoesdiced
- β2 tablespoons Mayonnaise
- β1 tablespoon Chopped fresh cilantro
- β Salt and pepperto taste

Boil the Peruvian potatoes in salted water until tender. Drain and set aside.

In a large bowl, mix together the cooked chicken, diced onion, diced avocado, and mayonnaise.

Add the chopped cilantro to the bowl and mix well.

Cut the boiled Peruvian potatoes in half lengthwise and carefully scoop out the flesh, leaving a shell.

Spoon the chicken mixture into the potato shells and top with the remaining potato flesh.

Place the causa rellena on a serving plate and garnish with additional cilantro if desired.
