Pan-Seared Fish with Roasted Vegetables
A simple and flavorful dish that combines the freshness of fish with the earthiness of roasted vegetables.
Ingredients
- ●4 fillets flaky fishwhite fish such as cod or tilapia
- ●2 cups roasted croatian potatoesthinly sliced
- ●2 cups roasted vegetablessuch as carrots, zucchini and bell peppers
- ●2 tablespoons olive oilfor cooking
- ●to taste salt and pepperfor seasoning

Preheat the oven to 425°F (220°C).

Season the fish with salt and pepper.

Heat the olive oil in a large skillet over medium-high heat.

Sear the fish for 2-3 minutes on each side, or until cooked through.

Transfer the fish to a baking sheet and roast in the oven for an additional 5-7 minutes.

Toss the sliced potatoes with olive oil, salt and pepper, and roast in the oven for 15-20 minutes, or until golden brown.

Add the roasted vegetables to the skillet and cook for an additional 2-3 minutes, or until tender.
