Chicken and Vegetable Tagine
A flavorful North African stew made with chicken, vegetables, and aromatic spices. Serve over couscous for a hearty and comforting meal.
Ingredients
- β1 pound chicken breastcut into 1-inch pieces
- β2 teaspoons algerian spice blendavailable at most Middle Eastern markets
- β1/2 teaspoon flaky sea saltuse a flaky sea salt like Maldon for the best flavor
- β1 teaspoon peppercornsfreshly ground is best
- β1 medium onionchopped
- β2 medium carrotspeeled and chopped
- β1 medium red bell pepperseeded and chopped
- β2 cups chicken brothhomemade or store-bought
- β1 cup coconut milkfull-fat for the best flavor
- β1 taginelarge, heavy-bottomed pot with a conical lid

Heat the tagine over medium heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the onion, carrots, and red bell pepper to the tagine. Cook until the vegetables are tender, about 5-7 minutes.

Add the algerian spice blend, flaky sea salt, and peppercorns to the tagine. Cook for 1 minute.

Add the chicken broth and coconut milk to the tagine. Stir to combine.

Bring the tagine to a simmer, then cover and cook for 20-25 minutes, or until the chicken is cooked through.
