Indian Shrimp Pancakes
A fusion of Indian and Southeast Asian flavors, these shrimp pancakes are a delicious and easy meal. The flaky pancake exterior gives way to a spicy shrimp filling.
Ingredients
- β1 cup flaky pancake mixavailable in most supermarkets
- β1 pound shrimppeeled and deveined
- β1/4 cup green chutney pasteavailable in most supermarkets
- β2 tablespoons mustard oilfor frying
- β1 teaspoon cumin seedsfor garnish

In a mixing bowl, combine 1 cup of flaky pancake mix, 1/4 cup of green chutney paste, and 1/4 cup of water to make the pancake batter.

Heat 1 tablespoon of mustard oil in a pan over medium heat.

Add the shrimp and cook until pink, about 2-3 minutes per side.

Add the cooked shrimp to the pancake batter and mix well.

Heat another tablespoon of mustard oil in a non-stick pan over medium heat.

Using a 1/4 cup measuring cup, scoop the pancake batter and pour onto the pan.

Cook for 2-3 minutes or until the bottom is golden brown.
