Irish Potato Pie

- ●2 large, peeled and diced Irish Potatoes
- ●2 tablespoons Fragrant Herbs (chopped parsley, thyme, and rosemary)

- ●2 tablespoons, melted Butter

Preheat oven to 375°F (190°C).

Roll out the flaky pastry dough to a thickness of about 1/8 inch.

Transfer the dough to a 9-inch pie dish and trim the edges to fit.

In a large bowl, combine the diced potatoes, chopped herbs, salt, and pepper.

Pour the melted butter over the potato mixture and toss to coat.

Spoon the potato mixture into the pie crust and smooth the top.

Bake for 35-40 minutes, or until the crust is golden brown and the potatoes are tender.
