Uruguayan Fish Empanadas
A classic Uruguayan dish of flaky pastry pockets filled with a zesty fish filling, perfect for a snack or light meal.
Ingredients
- β2 cups Flaky Pastry (Empanada Dough)
- β1 pound Fish (Cod or Hake)Diced
- β2 tablespoons Citrus Zest (Lime and Lemon)
- β1/4 cup Uruguayan Salsa Criolla
- β1 EggBeaten
- β Salt and Pepper

1. Preheat oven to 375Β°F (190Β°C).

2. Roll out the empanada dough to a thickness of about 1/8 inch.

3. Cut out circles of dough using a cookie cutter or the rim of a glass.

4. In a bowl, mix together the fish, citrus zest, Uruguayan salsa criolla, and beaten egg.

5. Place a tablespoon of the fish mixture onto the center of each dough circle.

6. Fold the dough over the filling to form a triangle or square shape, and press the edges together to seal.

7. Brush the tops of the empanadas with a little water and bake for 20-25 minutes, or until golden brown.
