Empanada de Queso y Verduras
A vegetarian twist on traditional Argentinian empanadas, filled with a mix of cheeses and sautéed vegetables.
Ingredients
- ●2 cups Flaky Pastry Doughhomemade or store-bought
- ●1 cup Mozzarella Cheeseshredded
- ●1/2 cup Parmesan Cheesegrated
- ●1 medium Onionchopped
- ●1 medium Bell Pepperchopped
- ●2 tbsp Citrusy Caper Sauceoptional

Preheat oven to 375°F (190°C).

Roll out the pastry dough to a thickness of about 1/8 inch.

Cut out circles of dough, about 4 inches in diameter.

Mix together the mozzarella and parmesan cheese.

Sauté the onion and bell pepper in a pan until softened.

Add the sautéed vegetables to the cheese mixture and stir to combine.

Place a tablespoon of the cheese mixture onto one half of each dough circle.

Brush the edges with water and fold the dough in half to form a half-moon shape.

Press the edges to seal and use a fork to crimp.

Brush the tops with the citrusy caper sauce (if using).

Place the empanadas on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until golden brown.
