Thai Mediterranean Pasta Bake
A creamy, flavorful Thai-inspired pasta bake with a Mediterranean twist. Perfect for a quick weeknight dinner.
Ingredients
- β8 oz pasta
- β1 sheet flaky, buttery pastrythawed
- β2 tbsp mediterranean blend of herbs
- β1 can coconut milkfull-fat
- β2 tbsp Thai red curry paste
- βto taste salt
- βto taste pepper
Instructions

Preheat oven to 375Β°F (190Β°C).

Cook pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 1 tbsp of coconut milk over medium heat.

Add Thai red curry paste and cook for 1 minute, stirring constantly.

Stir in mediterranean blend of herbs and cook for an additional minute.

Add cooked pasta to the skillet and toss with the curry sauce.

Transfer the pasta mixture to a baking dish.

Roll out the flaky, buttery pastry to fit the top of the baking dish.

Place the pastry on top of the pasta and bake for 20-25 minutes, or until the pastry is golden brown.

Serve hot, garnished with additional herbs if desired.
