Algerian Chickpea Tagine
A classic North African stew from Algeria, made with tender chickpeas, fiery spices, and smoky flavors.

Ingredients
- β1 1/2 cups Chickpeas
- β2 tsp Algerian spices (chillies, cumin, coriander)
- β1 tsp Fiery harissa
- β1 tsp Smoked paprika
- β2 tbsp Olive oil
- β1 large Onion
- β3 cloves Garlic
- β1/2 cup Dried apricots
- β1/4 cup Chopped fresh parsley

Instructions

Heat the olive oil in a large clay or ceramic pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the chickpeas, Algerian spices, harissa, smoked paprika, and dried apricots.

Stir to combine, then add 2 cups of water.
