Varenyky with Meat Filling
Ukrainian varenyky are boiled dumplings filled with a variety of ingredients, in this case a traditional meat and onion filling. They can be served with sour cream or fried onions.
Ingredients
- β1/2 cup, finely chopped Fermented cabbage
- β1 pound, mixed beef and pork Ground meatMake sure to cook the meat to an internal temperature of 165Β°F (74Β°C)
- β1 medium, finely chopped Onion
- β2 cups, homemade or store-bought Pastry doughMake sure to thaw the dough according to the package instructions
- β1/4 cup Water
- βto taste Salt
- βto taste Black pepper

In a large skillet, cook the ground meat over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the chopped onion to the skillet and cook until it is translucent.

Stir in the chopped fermented cabbage and cook for an additional 2-3 minutes.

Season the meat mixture with salt and black pepper to taste.

On a lightly floured surface, roll out the pastry dough to a thickness of about 1/8 inch.

Use a round cookie cutter or the rim of a glass to cut out circles of dough.

Place a tablespoon or two of the meat mixture in the center of each dough circle.

Fold the dough over the filling, forming a half-circle shape, and press the edges together to seal the varenyky.

Bring a large pot of salted water to a boil, then reduce the heat to a simmer.

Carefully add the varenyky to the pot and cook for 5-7 minutes, or until they float to the surface.

Remove the varenyky from the pot with a slotted spoon and serve hot with sour cream or fried onions.
