Fermented Birria Tacos
A twist on traditional birria, this recipe combines fermented flavors with the spices and richness of Mexican cuisine.
Ingredients
- β1 pound Birria meat (beef or goat)Shredded or chopped
- β1 cup Fermented cabbageShredded
- β1 teaspoon Mexican oregano
- β1/2 teaspoon Cumin
- β2 Dried ancho chiliesStemmed and seeded
- β1 cup YogurtFor serving
- β2 tablespoons Lime juiceFor serving
- βto taste Salt
Instructions

Brown the birria meat in a large pot over medium-high heat.

Add the Mexican oregano, cumin, and dried ancho chilies to the pot and cook for 1 minute.

Add 2 cups of water to the pot and bring to a boil.

Reduce the heat to low and simmer for 10 minutes.

Shred the fermented cabbage and add it to the pot.

Season the birria with salt to taste.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
