Cabbage Quesadilla Fritters
A Mexican-inspired twist on traditional quesadillas, featuring fermented cabbage as a key ingredient. These crispy fritters make for a delicious snack or side dish.
Ingredients

- β4 tortillas, cut into quarters quesadilla
- β1/2 cup, finely chopped onion
- β2 cloves, minced garlic
- β1/2 teaspoon cumin
- β1/4 teaspoon chili powder
- β1/4 teaspoon salt
- β1/2 cup corn oil

In a large bowl, combine the shredded cabbage, chopped onion, minced garlic, cumin, chili powder, and salt. Mix well.

Add the cut tortillas to the bowl and mix until the cabbage mixture is evenly distributed.

Heat 1/4 cup of corn oil in a large skillet over medium-high heat.
