Malaysian Vegan Noodle Stir Fry
A flavorful and spicy vegan noodle dish inspired by Malaysian cuisine. This recipe is quick and easy to make, perfect for a weeknight dinner.
Ingredients
- β200g rice noodlespreferably fresh
- β2 tbsp fermented bean pastealso known as belacan
- β1 tbsp vegan oilsuch as coconut or canola oil
- β1 medium onionthinly sliced
- β3 cloves garlicminced
- β1 medium bell pepperthinly sliced
- β2 tbsp vegan soy sauceor tamari
- β1 tsp sugaroptional
- β1/2 tsp chili flakesoptional, adjust to taste

Cook the rice noodles according to the package instructions. Drain and set aside.

Heat the vegan oil in a wok or large skillet over medium-high heat.

Add the fermented bean paste and cook for 1-2 minutes, until fragrant.

Add the onion, garlic, and bell pepper. Cook for 3-4 minutes, until the vegetables are tender.

Add the cooked noodles, vegan soy sauce, sugar, and chili flakes (if using). Stir-fry for 2-3 minutes, until everything is well combined.
