Light and Cozy Cheesy Stir-Fry

Ingredients
- β2 tablespoons Light soy sauce
- β1 teaspoon Fermented bean paste
- β1 cup Cheese (cheddar or mozzarella)
- β1 cup Mixed vegetables (bell peppers, carrots, broccoli)
- β2 tablespoons Coconut oil
- β1 inch piece Ginger
- β2 cloves Garlic
- βto taste Salt
- βto taste Black pepper
Instructions

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the ginger and garlic and stir-fry for 1 minute.

Add the mixed vegetables and stir-fry for 3-4 minutes or until they start to soften.

Add the fermented bean paste and stir-fry for another minute.

Add the light soy sauce and stir-fry for 30 seconds.

Add the cheese and stir-fry until it's melted and well combined with the vegetables.
