Spiced Chickpea Crumble
A delicious Indian-inspired vegetarian dish with a crunchy crumble topping. This recipe is perfect for a weeknight dinner.
Ingredients
- β1 can (14 oz) chickpeasdrained and rinsed
- β1 medium onionchopped
- β2 inches gingergrated
- β1 tsp cumin powder
- β1 tsp coriander powder
- βto taste salt
- β1/2 cup fermented yogurtplain, full-fat
- β1 cup crumblehomemade or store-bought

Preheat the oven to 375Β°F (190Β°C).

In a pan, heat 1 tablespoon of oil over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the ginger, cumin powder, and coriander powder. Cook for 1 minute.

Stir in the chickpeas, salt, and fermented yogurt. Cook for 2-3 minutes.

Transfer the mixture to a baking dish.
