Blackberry Empanadas with Argentine Twist
A sweet vegetarian empanada filled with a gooey blackberry and fermented filling, inspired by Argentinean empanada traditions.
Ingredients
- β1 package Frozen Puff PastryThaw according to package instructions
- β1 cup Fresh Blackberries
- β2 tbsp Fermented Apple Cider Vinegar
- β2 tbsp Granulated Sugar
- β1 tsp Vanilla Extract
- β1/4 cup Almond Flour
- β1 tbsp Egg Replacer

Preheat oven to 375Β°F (190Β°C).

Roll out puff pastry and cut into circles.

Mix blackberries, fermented apple cider vinegar, granulated sugar, and vanilla extract in a bowl.

Spoon a small amount of the blackberry mixture onto one half of each pastry circle.

Dip your finger in water and run it along the edge of the pastry.

Fold the other half of the pastry circle over the filling and press edges to seal.

Use a fork to crimp the edges.

Brush the tops of the empanadas with a little bit of water.

Sprinkle almond flour over the tops.
