Croatian Risotto Gratin Keto Bake
A rich, creamy, and cheesy keto dish that combines the flavors of Croatian cuisine with the comfort of a gratin.
Ingredients
- ●8 oz (225g) Fermented sausage (such as Croatian kulen)
- ●8 oz (225g) Dense, high-fat cream cheese
- ●1 cup (160g) Risotto rice
- ●1 cup (115g) Gratin cheese (such as Parmesan or Cheddar)
- ●4 tbsp (55g) Butter
- ●2 cloves Garlic
- ●1 tsp (5g) Xanthan gum (optional)To prevent the sauce from separating

Preheat the oven to 375°F (190°C).

Cook the risotto rice according to the package instructions until it's al dente.

In a separate pan, melt the butter and sauté the garlic until fragrant.

Add the fermented sausage to the pan and cook until browned.

In a mixing bowl, combine the cooked risotto rice, cream cheese, and grated gratin cheese.

Add the cooked sausage mixture to the bowl and mix until well combined.
