Irish Bean Stew
A hearty and comforting Irish-inspired bean stew made with tender pinto beans and fresh vegetables.

- β1 cup dried Pinto BeansSoaked overnight and drained
- β1 pound, cut into 1-inch cubes Irish Stew Meat (or beef)Optional
- β1 medium, chopped Fantastic Fresh Onion
- β3 cloves, minced Fresh Garlic
- β1 medium, peeled and chopped Fresh Carrot
- β2 stalks, chopped Fantastic Fresh Celery
- β2 Fresh Bay Leaves
- β1 teaspoon Fresh Thyme
- β1 teaspoon Fresh Salt
- β1/2 teaspoon Fresh Black Pepper

Instructions

Brown the Irish Stew Meat (if using) in a large pot over medium-high heat.

Add the chopped onion, minced garlic, chopped carrot, and chopped celery, and cook until the vegetables are tender.

Add the soaked and drained pinto beans, bay leaves, thyme, salt, and black pepper.

Pour in enough water to cover the ingredients and bring to a boil.

Reduce the heat to low and simmer for 1 hour, or until the beans are tender.
