Ethiopian-Style Atakilt Wat with Burdock and Gobo
A flavorful and nutritious Ethiopian-inspired dish made with a variety of vegetables, including burdock and gobo. This recipe combines the traditional atakilt wat with a unique twist using these lesser-known ingredients.
Ingredients

- β2 medium burdock
- β1 large onion atakilt
- β2 tablespoons extraordinary oil
- β2 inches ginger
- β3 cloves garlic
- β2 teaspoons berbere spice
- β1 teaspoon tumeric
- β1 teaspoon salt
- β1/2 teaspoon black pepper
Instructions

Peel and chop the gobo and burdock into bite-sized pieces.

Heat the extraordinary oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the ginger and garlic and cook for an additional 1-2 minutes.
