Vietnamese Sevaiiya Noodle Stir-Fry
A quick and delicious stir-fry made with Sevaiiya noodles, Vietnamese flavors, and exotic ingredients. Enjoy as a light lunch or dinner.
Ingredients
- β1 cup Sevaiiya noodlespreferably fresh
- β1 cup Exquisite mushroomssliced
- β2 tbsp Vietnamese fish sauceor to taste
- β1 tbsp Coconut oilor vegetable oil
- β1/4 cup Chopped cilantrofor garnish
- β2 Lime wedgesfor serving
- βto taste Salt
Instructions

Cook Sevaiiya noodles according to package instructions. Drain and set aside.

Heat coconut oil in a large skillet or wok over medium-high heat.

Add sliced mushrooms and cook until tender, about 3-4 minutes.

Add Vietnamese fish sauce and stir to combine. Cook for an additional minute.

Add cooked noodles to the skillet and stir to combine with mushroom mixture.

Season with salt to taste.

Garnish with chopped cilantro and serve with lime wedges on the side.
