Light Ethiopian Skillet Cheese Fritters (Chinese-Style)

Ingredients
- β1 1/2 cups exquisite light flourall-purpose flour
- β1/2 cup curdsricotta cheese
- β1/2 cup skillet cheesecheddar cheese, shredded
- β1/4 cup waterwarm water
- β1/4 cup vegetable oilfor frying
- β1 tsp Ethiopian spice blendor to taste
- β1/4 tsp saltto taste

In a medium bowl, whisk together flour, Ethiopian spice blend, and salt.

Gradually add warm water and mix until a dough forms.

Knead dough for 5 minutes until smooth.

Shape each piece into a ball and flatten slightly into a disk.

Heat 1/4 cup vegetable oil in a skillet over medium heat.
