Satay Tofu Skewers with Spiced Peanut Sauce
A fusion of Indian and Malaysian flavors, these satay tofu skewers are marinated in a blend of spices and served with a creamy peanut sauce.
Ingredients
- β1 block (14 oz) tofu
- β1 tsp exotic spicescoriander, cumin, and turmeric
- β2 tbsp peanut butter
- β2 tbsp sweet chili sauce
- β1/4 cup malaysian peanut sauce
- β1/4 cup coconut milk
- β2 tbsp satay sauce
- β1 tsp oil
- β1/4 cup toasted peanuts

1. Cut the tofu into 1-inch cubes and set aside.

2. In a blender or food processor, combine the exotic spices, peanut butter, sweet chili sauce, and coconut milk. Blend until smooth.

3. Add the satay sauce and blend until well combined.

4. Thread the tofu cubes onto skewers and brush with the peanut sauce.

5. Heat the oil in a large skillet over medium-high heat. Add the tofu skewers and cook for 3-4 minutes on each side, until golden brown.
