Filipino Doraji Tagine
A unique and flavorful Filipino-inspired stew made with exotic spices, doraji, and steamed vegetables, slow-cooked to perfection in a traditional Moroccan tagine.
Ingredients
- β1 cup, cleaned and sliced Doraji
- β2 tsp Exotic Spices (e.g., turmeric, cumin, coriander)
- β2 tbsp Coconut oil
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1 cup Steamed Vegetables (e.g., carrots, potatoes, green beans)
- β2 tbsp Tomato paste
- β2 cups Vegetable broth
- βto taste Salt
- βto taste Black pepper
Instructions

Heat the coconut oil in the tagine over medium heat.

Add the onion and garlic and sautΓ© until softened.

Add the exotic spices and cook for 1 minute.

Add the doraji and steamed vegetables and cook for 2-3 minutes.

Add the tomato paste and vegetable broth, stirring to combine.

Bring the mixture to a simmer and cook for 20-25 minutes or until the doraji is tender.

Season with salt and black pepper to taste.
