Exotic Spanish Paella
A flavorful and spicy paella dish inspired by Spanish cuisine, featuring exotic spices and seafood.
Ingredients
- ●2 cups Saffron-infused chicken brothUse store-bought or homemade broth
- ●1 cup Spanish riceShort-grain rice works best
- ●1 tsp Exotic spice blend (cumin, coriander, smoked paprika)Adjust to taste
- ●1 pound Large shrimp, peeled and deveinedFresh or frozen, thawed
- ●1 pound Mussels, scrubbed and debeardedFresh or frozen, thawed
- ●1 Red bell pepper, dicedAny color bell pepper works
- ●2 tbsp Olive oilUse a good-quality oil
- ●3 cloves Garlic, mincedUse 2-3 cloves for a stronger flavor
- ●1 Tomato, dicedFresh or canned, drained

Heat oil in a large paella pan or skillet over medium-high heat.

Add garlic and sauté for 1-2 minutes until fragrant.

Add the shrimp and mussels, and cook until they start to turn pink, about 2-3 minutes.

Add the diced red bell pepper and cook for an additional 2-3 minutes.

Add the tomato, saffron-infused chicken broth, Spanish rice, and exotic spice blend.

Stir well to combine and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
