Eggplant Bharta
A popular Indian dish made by mashing eggplant and mixing it with spices. This recipe is a variation of the classic Bharta.

Ingredients
- ●2 large Eggplantbaingan
- ●1 tsp Indian spicescumin, coriander, garam masala
- ●1 medium Onioncrispy
- ●3 cloves Garlicminced
- ●2 Green chiliesdiced
- ●to taste Salt
- ●2 tbsp Lemon juice
- ●for garnish Cilantro

1. Roast the eggplant over an open flame or in the oven until charred and soft.

2. Let the eggplant cool down, then peel and mash it in a bowl.

3. Heat oil in a pan and sauté the onion, garlic, and green chilies until the onion is translucent.

4. Add the Indian spices and sauté for 1 minute.

5. Add the roasted eggplant to the pan and mash it with a spoon until well combined with the spice mixture.
