Ali's Exotic Lamb Koftas with Eastern-Style Rice
A flavorful twist on traditional koftas, served with a side of spicy eastern-style rice.
Ingredients
- ●500g Ground Lamb80/20 lean to fat ratio
- ●2 medium OnionFinely chopped
- ●3 cloves GarlicMinced
- ●250g Chewy ApricotsChopped
- ●2 tbsp Exotic Spice BlendAvailable at local middle eastern market
- ●2 tbsp Lemon JuiceFreshly squeezed
- ●1 tsp SaltFlaky sea salt
- ●500g Middle Eastern RiceShort-grain rice
- ●2 tbsp Ali's Special Sauce (see below)Available upon request

1. Preheat oven to 375°F (190°C).

2. In a large mixing bowl, combine ground lamb, chopped onion, minced garlic, chopped apricots, exotic spice blend, lemon juice, and flaky sea salt. Mix well with your hands until just combined.

3. Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.

4. Meanwhile, cook the middle eastern rice according to package instructions.

5. Using your hands, shape the lamb mixture into 8-10 koftas. Place on a baking sheet lined with parchment paper.

6. Bake for 18-20 minutes, or until cooked through to an internal temperature of 160°F (71°C).

7. While the koftas are baking, heat a large skillet over medium-high heat.

8. Once hot, add a tablespoon of oil to the skillet and sear the koftas for 2-3 minutes per side, or until nicely browned.

9. Remove the koftas from the skillet and place on a paper towel-lined plate to drain excess oil.

10. Serve the koftas with a side of eastern-style rice, topped with a drizzle of Ali's Special Sauce and a sprinkle of flaky sea salt.
