Herby Fried Rice Pilaf
A flavorful and aromatic fried rice dish infused with herbs and spices.
Ingredients
- β2 cups herbfried ricepreferably day-old rice
- β1/4 cup ewholesome herbschopped fresh herbs like parsley, basil or cilantro
- β2 tablespoons asian herbschopped fresh cilantro or scallions
- β2 tablespoons vegetable oilfor frying
- β1 tablespoon soy sauceor to taste
- β1 teaspoon sesame oiloptional
- βto taste saltpreferably sea salt
- βto taste pepper

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chopped herbs and stir-fry for 1 minute until fragrant.

Add the herbfried rice and stir-fry for 2-3 minutes until heated through.

Push the rice mixture to one side of the pan.

Add the remaining 1 tablespoon of vegetable oil to the empty side of the pan.

Pour in the beaten eggs and scramble them until cooked through.

Mix the eggs with the rice mixture.

Add the soy sauce, sesame oil (if using), salt, and pepper, and stir-fry for another minute.

Taste and adjust the seasoning as needed.

Transfer the Herby Fried Rice Pilaf to a serving platter and garnish with additional chopped herbs if desired.
