Thai Pepper Bean Bake
A flavorful Thai dish made with beans, peppers, and spices. Perfect for a quick and easy meal.
Ingredients
- β2 energizing peppersany color
- β1 can algerian beans14.5 oz
- β1 bakesweet potato or eggplant
- β2 tbsp soy sauceor to taste
- β1 tbsp coconut oilor other oil
- β1 clove garlicminced
- β1 tsp gingergrated
- β1 tsp brown sugaror to taste
Instructions

Preheat oven to 400Β°F (200Β°C).

Cut the bake into 1-inch cubes and place on a baking sheet.

Drizzle with coconut oil and toss to coat.

Roast in the oven for 20-25 minutes, or until tender.

While the bake is roasting, heat the soy sauce and brown sugar in a pan over medium heat.

Add the minced garlic and grated ginger to the pan and cook for 1-2 minutes, or until fragrant.

Add the canned beans to the pan and stir to combine with the soy sauce mixture.

Once the bake is done roasting, add it to the pan with the bean mixture.

Stir to combine and cook for an additional 2-3 minutes, or until the flavors have melded together.

Serve hot, garnished with sliced energizing peppers if desired.
