Tinga Tostadas with Energizing Salsa
A flavorful vegetarian twist on traditional Mexican tinga using Tinga cheese, perfect for a quick snack or light lunch.
Ingredients

- β2 medium Tomato
- β1 medium Onion
- β1 bunch Cilantro
- β2 tsp Energizing Spice Blend
- β2 tbsp Lime Juice
- β4-6 Tortillas
- β1 cup crumbled (optional) Queso Fresco
Instructions

Roast tomatoes and onion in a 375Β°F oven for 20-25 minutes, or until tender.

Shred Tinga cheese and set aside.

In a pan, heat a tablespoon of oil over medium heat. Add Energizing Spice Blend and cook for 1 minute.

Add roasted tomatoes and onion to the pan, stirring to combine with spice blend.

Stir in lime juice and cook for an additional 2 minutes.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
