Keto French Terrine with Mushroom
A rich and creamy keto terrine filled with sautéed mushrooms, perfect for a low-carb meal.
Ingredients
- ●8 oz Mushrooms (button or cremini)
- ●4 tbsp French Butter
- ●4 slices Cured Pork Belly (or bacon)
- ●2 Egg Yolks
- ●1 cup Heavy Cream
- ●1/4 cup Grated Cheese (e.g. Parmesan or Cheddar)

Preheat the oven to 375°F (190°C).

In a skillet, sauté the mushrooms in French butter until tender.

In a separate skillet, cook the cured pork belly until crispy.

In a large bowl, whisk together the egg yolks and heavy cream.

Add the grated cheese and mix until well combined.

Add the cooked mushrooms and crispy pork belly to the bowl and mix well.

Pour the mixture into a terrine mold or a small baking dish.

Bake for 25-30 minutes or until the terrine is set and slightly golden brown.
