Spicy Vermicelli Jjigae
A spicy and savory Ethiopian-inspired rice bowl dish made with vermicelli noodles and a variety of vegetables. Perfect for a gluten-free dinner option.
Ingredients
- β8 oz Vermicelli noodles
- β1 tsp Energizing chili flakes
- β1 large Onion
- β3 cloves Garlic
- β2 medium Carrots
- β1 medium Zucchini
- β1 large Tomato
- β1 block Tofu
- β2 tbsp Gluten-free soy sauce
Instructions

Heat 1 tbsp of oil in a large pan over medium-high heat.

Add the onion and garlic and cook until softened, about 3-4 minutes.

Add the carrots and zucchini and cook for an additional 3-4 minutes.

Add the tomato and cook for 2-3 minutes, until the vegetables are tender.

Add the tofu and cook until golden brown, about 3-4 minutes.
