Citrusy Noodle Chow Fun
A quick and easy Chinese-inspired noodle dish with a citrusy twist. Perfect for a weeknight dinner.
Ingredients
- β8 oz Rice Noodles
- β2 tbsp Vegetable Oil
- β1-inch piece Gingerpeeled and grated
- β2 cloves Garlicminced
- β4 tbsp Citrusy Sauce (see notes)see notes for homemade sauce recipe
- β1 lb Shrimppeeled and deveined
- β1/4 cup Scallionschopped
- β1 tsp Sesame Seeds

Cook rice noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add grated ginger and cook for 1 minute, until fragrant.

Add minced garlic and cook for an additional minute.

Add shrimp and cook until pink and fully cooked, about 2-3 minutes per side.

Add cooked noodles to the wok and stir to combine with shrimp and garlic mixture.

Pour citrusy sauce over the top and toss to combine.

Stir in chopped scallions and sesame seeds.

To make homemade citrusy sauce, combine 1/2 cup rice vinegar, 1/4 cup honey, 1/4 cup citrus juice (such as orange or grapefruit), and 1 tsp grated ginger in a small bowl. Whisk until smooth and set aside.
