Portuguese Tomato Gratins
A simple yet elegant Portuguese-inspired dish featuring fresh tomatoes and creamy cheese, perfect for a light lunch or dinner.
Ingredients

- ●2 large tomatoany variety, but cherry tomatoes work well too
- ●1 cup, grated gruyère cheesecan be substituted with other Swiss-style cheese
- ●2 tablespoons butterunsalted
- ●1 clove garlicminced
- ●1/4 cup, chopped fresh parsleyfor garnish

Preheat the oven to 375°F (190°C).

Slice the bread into 1-inch (2.5 cm) thick slices and toast until lightly browned.

In a separate pan, melt the butter over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.

Arrange the toasted bread slices in a baking dish. Top each slice with a tomato half, a sprinkle of cheese, and a spoonful of the garlic butter.
