Tender Lamb Tagine
A flavorful Mediterranean-inspired stew cooked in a traditional tagine, perfect for a special occasion. Unfortunately, this recipe cannot be vegan as it features lamb as the main ingredient.
Ingredients
- β1.5 lbs Lamb shoulder
- β2 tbsp Olive oil
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β1-inch piece GingerGrated
- β1 tsp Cumin
- β1 tsp Cinnamon
- β1 tsp Paprika
- β1 tsp Salt
- β1 tsp Black pepper
- β1/4 cup Chopped fresh parsley

1. Season the lamb with salt and black pepper.

2. Heat the olive oil in a large tagine or Dutch oven over medium-high heat.

3. Sear the lamb until browned on all sides, about 5 minutes.

4. Remove the lamb from the pot and set aside.

5. Reduce the heat to medium and add the onion to the pot.

6. Cook the onion until softened, about 5 minutes.

7. Add the garlic and ginger to the pot and cook for 1 minute.

8. Stir in the cumin, cinnamon, and paprika. Cook for 1 minute.

9. Add the browned lamb back to the pot and pour in enough water to cover the lamb.

10. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 2 1/2 hours, or until the lamb is tender.

11. Skim any excess fat from the surface of the stew.

12. Taste and adjust the seasoning as needed.
