Ukrainian Beet Fritters
A traditional Ukrainian dish made with beets and served as a snack or side. The earthy sweetness of beets pairs perfectly with a crispy exterior.
Ingredients
- β2 large beetspeeled and grated
- β1 cup all-purpose flourgluten-free flour for vegan option
- β1 cup fry oilvegetable oil for frying
- β1 medium onionfinely chopped
- β2 cloves garlicminced
- βto taste salt
- βto taste black pepper
- βfor garnish chopped fresh dill

In a large bowl, combine grated beets, chopped onion, minced garlic, salt, and black pepper.

In a separate bowl, mix together flour and a pinch of salt.

Add the dry ingredients to the beet mixture and mix well.

Heat the fry oil in a deep frying pan over medium-high heat.

Using a spoon, drop small balls of the beet mixture into the hot oil.

Fry the fritters for 3-4 minutes on each side, until golden brown.

Using a slotted spoon, remove the fritters from the oil and place them on a paper towel-lined plate.

Serve the fritters hot, garnished with chopped fresh dill.

For a vegan option, use gluten-free flour and omit the egg from the recipe.
