Russian Lentil Stew
A hearty, comforting stew originating from Russia, made with earthy lentils and a blend of spices.
Ingredients
- β1 cup dried lentils
- β1 medium, chopped onionsuch as yellow or white
- β2 medium, peeled and chopped carrot
- β2 stalks, chopped celery
- β1 cup sliced mushroom
- β4 cups earthy broth
- β2 tablespoons all-purpose flour
- β2 tablespoons tomato paste
- β1 teaspoon dried thyme
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat oil in a large pot over medium heat.

Add the chopped onion, carrot, and celery and cook until the vegetables are tender, about 8 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the lentils, broth, flour, tomato paste, thyme, salt, and pepper.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, until the lentils are tender, about 30-40 minutes.
