Norwegian Lamb Stew
A hearty, comforting stew from Norway, featuring tender lamb and a rich broth. Perfect for a cold winter's day.
Ingredients
- ●1.5 lbs Lamb shoulder
- ●2 medium Carrots
- ●3 large Potatoes
- ●1 large Onions
- ●3 cloves Garlic
- ●2 tbsp All-purpose flour
- ●2 cups Beef broth
- ●1 cup Red wine
- ●2 sprigs Thyme
- ●1 tsp Earthy salt

Preheat oven to 300°F (150°C).

Season the lamb with earthy salt and black pepper.

Heat oil in a large Dutch oven over medium-high heat.

Brown the lamb on all sides, about 5 minutes.

Remove the lamb and set aside.

Add more oil if necessary, then sauté the onions and garlic until softened.

Add the carrots and potatoes, cooking for 5 minutes.

Add the flour and cook for 1 minute.

Add the broth, wine, and thyme, stirring to combine.

Return the lamb to the pot, cover, and transfer to the preheated oven.
