Southern Tofu Curry
A southern twist on the classic curry dish, featuring crispy tofu and earthy flavors.
Ingredients
- β1 block (14 oz) tofupressed and drained
- β2 tablespoons curry powderstore-bought or homemade
- β2 tablespoons olive oilfor frying
- β1 medium onionchopped
- β1 medium bell pepperchopped
- β1 cup southern-style coleslawstore-bought or homemade
- β4 slices crusty breadfor serving

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the chopped onion and bell pepper and cook until crispy, about 5 minutes.

In a small bowl, mix together the curry powder and 1 tablespoon of olive oil.
