Savoy Cabbage Bilo Curry
A twist on traditional Indian cuisine, this curry combines the earthy flavors of savoy cabbage and bilo with a tangy and aromatic blend of spices.
Ingredients
- β1 head, chopped savoy cabbageany color
- β1 cup, sliced biloor bilo bilo, sweet potato
- β2 tablespoons ghee
- β1 medium onionchopped
- β2 inches gingergrated
- β3 cloves garlicminced
- β2 teaspoons curry powder
- β1 teaspoon turmeric
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1 teaspoon salt
- β1/2 teaspoon black pepper
- β1 can coconut milkfull-fat

Heat the ghee in a large pan over medium heat.

Add the onion, ginger, and garlic and sautΓ© until the onion is translucent.

Add the curry powder, turmeric, cumin, coriander, salt, and pepper. Cook for 1 minute.

Add the chopped savoy cabbage and sliced bilo. Cook for 5 minutes.

Add the coconut milk and stir to combine.
