Vegan Earthy Dumplings with Apple and Fermented Salsa
A delicious vegan twist on traditional dumplings, featuring earthy flavors and a tangy fermented salsa.
Ingredients
- β1 cup Earthly mushroomssuch as portobello or cremini
- β1 package Vegan dumpling wrappersusually found in the frozen food section or at an Asian market
- β1 medium Appleany variety, diced
- β1/2 cup Fermented cabbagesuch as kimchi or sauerkraut, chopped
- β2 tablespoons Vegan soy sauceor other plant-based soy sauce alternative
- β2 cloves Garlicminced
- β1/4 cup Fresh cilantrochopped
- β1 teaspoon Saltto taste

1. In a large pan, heat 1 tablespoon of oil over medium heat.

2. Add the earthy mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

3. Add the diced apple and cook for an additional 2-3 minutes, until the apple starts to soften.

4. In a separate pan, heat the remaining 1 tablespoon of oil over medium heat.

5. Add the chopped fermented cabbage and cook until it starts to caramelize, about 5 minutes.

6. Add the minced garlic and cook for an additional 1 minute, until fragrant.

7. In a large bowl, combine the cooked mushroom and apple mixture, the cooked cabbage mixture, and the chopped cilantro.

8. In a separate bowl, whisk together the vegan soy sauce and salt.

9. Add the soy sauce mixture to the bowl with the mushroom and cabbage mixture, and stir to combine.

10. Lay a dumpling wrapper on a flat surface and place a tablespoon of the filling in the center of the wrapper.

11. Dip your finger in a small amount of water and run it along the edges of the wrapper.

12. Fold the wrapper into a triangle by bringing the two opposite corners together to form a point, and press the edges together to seal the dumpling.
