Earthy Bean Delight
A hearty Italian-inspired dish featuring earthy flavors and tender beans.
Ingredients
- β1 1/2 cups cannellini beans, drained and rinsed
- β1 cup earthy mushrooms, slicedsuch as cremini or shiitake
- β1 medium onion, choppedabout 2 cups
- β3 cloves garlic, minced
- β2 tablespoons olive oil
- β1 teaspoon dried thyme
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β1/4 cup grated romano cheeseoptional
- β1/4 cup fresh parsley, choppedoptional

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 8 minutes.

Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 5 minutes.

Add the minced garlic and cook, stirring constantly, for 1 minute.

Stir in the thyme, salt, and black pepper. Cook for 1 minute.

Add the cannellini beans to the skillet and stir to combine with the onion and mushroom mixture.
