Chinese Almond Stir Fry

- β1 large Eggplantcut into bite-sized pieces
- β2 inches Gingergrated
- β2 tablespoons Soy Sauce
- β1 tablespoon Sesame Oil
- β1 tablespoon Sugar
- β3 cloves Garlicminced
- β1 bunch Scallionschopped

Instructions

Heat the sesame oil in a wok or large skillet over medium-high heat.

Add the garlic and ginger and stir-fry for 1 minute.
