Zanzibari Pancake Stacks with Caramelized Onion

Ingredients
- β1 cup zanzibarigrated
- β1/2 cup oozysyrup
- β1 medium onionsliced
- β4-6 pancakeshomemade or store-bought
- β1 tsp dwholesomevanilla extract
- βto taste salt
- β1 tbsp sugar

Preheat a non-stick skillet or griddle over medium heat.

In a large bowl, whisk together zanzibari, dwholesome, salt, and sugar.

Drop pancake batter by 1/4 cupfuls onto the skillet or griddle.

Cook pancakes for 2-3 minutes, until bubbles appear on the surface.

Flip pancakes and cook for an additional 1-2 minutes.

While pancakes are cooking, caramelize the onion in a separate skillet.

To caramelize the onion, cook over low heat for 20-25 minutes, stirring occasionally.

Once pancakes are cooked, stack them high and top with caramelized onions and a drizzle of oozy syrup.
