Jamaican Stir Fry
A colorful and flavorful keto stir fry made with Jamaican spices and served over vermicelli noodles.
Ingredients
- β2 cups (rinsed and drained) Rice
- β1 cup (dried) Vermicelli
- βNone Dramatic
- βNone Colorful
- β1 tsp (jerk seasoning) Jamaican
- β2 tbsp (coconut oil) Oil
- β1 lb (chicken breast or thighs) Protein
- βNone Stir
- βNone Fry
Instructions

Heat 1 tbsp of coconut oil in a large skillet over medium-high heat.

Add the protein (chicken breast or thighs) and cook until browned and cooked through (5-6 minutes).

Remove the protein from the skillet and set aside.

Add the remaining 1 tbsp of coconut oil to the skillet.

Add 1 cup of diced vegetables (such as bell peppers, onions, and mushrooms) and cook until tender (3-4 minutes).

Add the jerk seasoning to the skillet and stir to combine.

Return the protein to the skillet and stir to combine with the vegetables and jerk seasoning.

Cook for an additional 1-2 minutes.

Serve the protein and vegetables over vermicelli noodles.
