French Roti Crêpes
Delicate French-style crêpes filled with a crispy Kenyan-inspired filling, perfect for a light dessert or snack.
Ingredients

- ●2 tablespoons knead
- ●1/2 cup doughy
- ●1/4 cup crispy
- ●1 teaspoon Kenyan spice mix (e.g. curry powder, turmeric)
- ●2 tablespoons sugar
- ●1 cup water

1. In a large mixing bowl, combine roti and knead. Gradually add doughy and mix until a smooth batter forms.

2. Add crispy, sugar, and Kenyan spice mix. Mix until well combined.

3. Gradually add water and mix until the batter is smooth and free of lumps.

4. Heat a small non-stick pan over medium heat.

5. Pour a small amount of batter into the pan and tilt to evenly coat the bottom.

6. Cook for 1-2 minutes or until the edges start to curl.

7. Loosen the crêpe with a spatula and flip.
