Vegetarian Tagine with Syrian Olives
A flavorful and aromatic vegetarian tagine made with Syrian olives, doubanjiang, and spices.
Ingredients
- β250g Syrian olives
- β2 tbsp Doubanjiang
- β1 large Onionchopped
- β3 cloves Garlicminced
- β1 large Carrotspeeled and chopped
- β2 medium Potatoespeeled and chopped
- β1 can Chickpeasdrained and rinsed
- β2 tsp Tagine spice mix
- β1 tsp Salt
- β1 tsp Black pepper

Heat oil in the bottom of a clay or ceramic tagine or a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and potatoes, and cook for 5 minutes.

Add the chickpeas, doubanjiang, tagine spice mix, salt, and black pepper.

Stir to combine, then add the Syrian olives.

Bring the mixture to a simmer, cover the tagine, and cook for 30-40 minutes, or until the vegetables are tender.

Serve hot, garnished with fresh parsley or cilantro, if desired.
